As of Version 2.0, you can choose the grading scheme for your courses as you create them. Just choose Grading Scheme while creating a new course or editing an existing one.

Assignments you create will use their course's grading scheme by default, but you can change the grading scheme on a per-assignment basis. This means you could have a pass/fail assignment in a course which uses the percentage grading scheme.
